sweet potatoes are one of our favorite root vegetables. high in beta carotene (more than carrots), they deliver a remarkable amount anti-oxidants. they also contain a lovely array of vitamins and minerals including iron, calcium, selenium, and they're a good source of most of our B vitamins and vitamin C!
